Lean Gluten Free Meatloaf

Ingredients

1 lb lean ground turkey

1 large egg
-
1/4 cup gluten-free ketchup - see DIY ketchup recipe

1 small yellow onion, diced

1 small zucchini, shredded

1 small carrot, shredded

1 cup 4C gluten-free panko bread crumbs

1 1/2 tsp italian seasoning

1 tsp gluten free worcestershire sauce
Directions

Preheat the oven to 350F.

Combine all ingredients, except only half of ketchup, into a large bowl.

Kneed raw meat into and continue to mix with hands until all ingredients are evenly combined.

Press meat mixture into a loaf pan.

Bake for 30 minutes.

After 30 minutes take the meatloaf out, pour remaining ketchup on top of the loaf and spread evenly using a spatula.

Put back in the oven and bake for an additional 30 minutes.

Serve immediately.
