  • 1 lb lean ground turkey

  • 1 large egg

  • 1/4 cup gluten-free ketchup - see DIY ketchup recipe

  • 1 small yellow onion, diced

  • 1 small zucchini, shredded

  • 1 small carrot, shredded

  • 1 cup 4C gluten-free panko bread crumbs

  • 1  1/2 tsp italian seasoning

  • 1 tsp gluten free worcestershire sauce

Preparation

  1. Preheat the oven to 350F.

  2. Combine all ingredients, except only half of ketchup, into a large bowl.

  3. Kneed raw meat into and continue to mix with hands until all ingredients are evenly combined.

  4. Press meat mixture into a loaf pan.

  5. Bake for 30 minutes.

  6. After 30 minutes take the meatloaf out, pour remaining ketchup on top of the loaf and spread evenly using a spatula.

  7. Put back in the oven and bake for an additional 30 minutes.

  8. Serve immediately.
